Loaded with nutrients and utterly delicious this Vegan Gluten free, Sugar-free Nuts & Seeds Bars are perfect for a quick pick-me-up snack for those lazy days.  As the schools are reopening after a two year long pandemic this bar is a light on the stomach kind of a snack that is quite enjoyable as a tiffin snack by the kids. Do give it a try.




Ingredients:
• 3/4 cup desiccated coconut
• 2/3 cup dry fruits
• 1/4 cup seeds
• 1/4 cup dates & jaggery paste with 1 tbsp oil
• 2 tbsp peanut butter in room temperature
• 1/4 tsp salt

Let's do it :
Dry roast the desiccated coconut, make sure not to burn it.
Chop the dry fruits in all small pieces and dry roast the dry fruits & seeds mix separately.

Mix them well, and add salt
Add the dates & Jaggery paste
Add Peanut butter
Mix everything nicely
Press the mix in a parchment paper lined loaf tin/or any baking try where you want to set the bar.
Add some more nuts & seeds on top and press firmly
Bake in a preheated oven just for 8-10 mins
Cool it down and freeze for an hour.
Cut into small bars and enjoy

PS : For storing, keep them refrigerated in an air-tight container.
