Moth beans, also known as matki, are very common in the Indian diet, especially in Maharashtrian cuisine. It is generally sprouted but can be eaten split or whole. Matki is used to make dal, soup, subzi, usal, misal, khichdi, etc. Along with being a high source of protein and antioxidants, it also has a good amount of fiber, magnesium, phosphorus and vitamin B1. It is beneficial in weight loss, building muscle mass, managing cholesterol levels and reducing blood pressure and the risk of infections.
